Amen to that!!Big Butt

It never ceases to amaze me!  How many people know “so much” about food.  Generally, just enough to be a danger to themselves and others.  To this day, there is this permeating thought that quantity of food will override the quality of what you eat.  What I’m talking about is the thought that if I simply eat less, I’ll weigh less.  The truth could not be FURTHER.  The TRUTH is that the quantity of what you eat is a totally secondary factor to the quality of the food you eat.  You could eat MORE good food, and weigh less than if you ate LESS bad food.  The fact is that with good quality whole foods, the body understands how to process and use what you eat.  Therefore, it is better able to burn and utilize what it’s given.  However, with poor quality food, there are so many things that the body just cannot process and/or use in any way, so it simply stores them away.  And, to boot, you end up deficient in nutrients as well.  So, focus more on WHAT you eat on a daily basis, and less on HOW MUCH you eat.  You’ll be better off.

Does this look like the prototypical bully to you?  This is Maria Kang.  She is the mother of 3 and a fitness model and show competitor.  She posted this picture about a year ago, after the birth of her 3rd son.  She posted it on HER OWN Facebook page.  Since then, most of the commentary has been positive and inspirational, but others have accused her of being a bully and “fat-shaming” to the general public.  To these people, I say….GROW UP AND SHUT UP!!  She’s not lucky, she’s definitely NOT a bully.  After she had children, she was inspired to be better than she had been.  To be fit and healthy.  She busted her ASS to make that happen.  Will everybody be able to achieve the levels of success that she has, no.  But they can be better than they were.  To all the moms out there who have gone through the rigors of delivery and made a commitment to make themselves better and fitter afterwards, I give the highest congratulations to.  That’s awesome!!  So many others just use it as an excuse.  It’s sad that that’s what our society has come to, that we can look at that and call her a bully.  Obviously these people don’t know what a bully really is.  They would prefer to point the finger at others, instead of the thumb at themselves.

So, in the past years, I’ve posted pictures of the Sabino family garden.  We love our garden.  We get so much good stuff, and get to share so much good stuff (we’ve probably given away POUNDS of basil this year).  So, I want to share with you one of our favorite garden fresh recipes.  It’s for homemade Pico/Salsa (just depends on how chunky you like it).  We use a ton of it.  Put it on everything from chips to eggs.  So, here it is.

Makes about 16oz.

2-3 tomatoes, chopped (depending on the size)

1/2 – 1 jalepeno chopped (seed it if you want it milder.  I’ve been using serranos, myself)

1 onion, chopped

1 green onion, chopped

2-3 Tbsp fresh Cilantro, finely chopped

1 Tsp garlic powder

Juice of 1 lime

Salt and Pepper to taste

Mix everything in a bowl.  I like to take about 1/2 to 2/3 of it and pulse it in the blender to make it a little salsa-ier.  Let it sit for at least 30 minutes to let the flavors marry and enjoy!

Some simple variations include adding some roasted pineapple (amazing) or making a whole roasted salsa by putting all the fresh ingredients under the broiler for about 15 minutes.  I’d swap out the garlic powder for 1-2 fresh cloves for that one.  Bon Appetit!
