So, in the past years, I’ve posted pictures of the Sabino family garden.  We love our garden.  We get so much good stuff, and get to share so much good stuff (we’ve probably given away POUNDS of basil this year).  So, I want to share with you one of our favorite garden fresh recipes.  It’s for homemade Pico/Salsa (just depends on how chunky you like it).  We use a ton of it.  Put it on everything from chips to eggs.  So, here it is.

Makes about 16oz.

2-3 tomatoes, chopped (depending on the size)

1/2 – 1 jalepeno chopped (seed it if you want it milder.  I’ve been using serranos, myself)

1 onion, chopped

1 green onion, chopped

2-3 Tbsp fresh Cilantro, finely chopped

1 Tsp garlic powder

Juice of 1 lime

Salt and Pepper to taste

Mix everything in a bowl.  I like to take about 1/2 to 2/3 of it and pulse it in the blender to make it a little salsa-ier.  Let it sit for at least 30 minutes to let the flavors marry and enjoy!

Some simple variations include adding some roasted pineapple (amazing) or making a whole roasted salsa by putting all the fresh ingredients under the broiler for about 15 minutes.  I’d swap out the garlic powder for 1-2 fresh cloves for that one.  Bon Appetit!
